This recipe was given to me by my Sous Chef Carl who claims they were given to him by Lucy. Wherever the recipe originates from they are simply superb and were so poular during the winter of 2007/2008 that we had to start hiding them from the staff!!
Ingredients
250g unsalted butter 250g good quality dark chocolate 500g caster sugar 4 eggs 250g flour 1/2 tsp baking powder Pinch salt
Method
Preheat oven to 170 degrees. Grease a brownie tin and line with baking paper
Put 250g of unsalted butter and 250g of plain chocolate into a saucepan and melt on medium heat.
Remove from the heat and stir in 500g of caster sugar, beat in 4 eggs (wait 5 minutes for the chocolate to cool slightly), add 250g plain flour and add a pinch of salt and half a teaspoon of baking powder. Pour into the brownie tin and bake for 45mins only.
Remove and allow to cool for abound 30 mins in the tin then take it out of the tin and allow to cool for 10 more minutes. Enjoy!!
