Residential chalet cookery courses in France and Scotland |

Introduction
Aimed at keen amateurs wanting to work a ski season, yet lacking the confidence to cook for larger numbers, this course provides the perfect opportunity to learn new skills, gain a more advanced range of cooking techniques and have a greater selection of menu's in your repertoire.
The course is run by John, who has over 20 years experience in the catering industry, including 6 years spent working as a chef in Switzerland and 10 ski seasons catering in chalets and hotels. As a Director of The Winter Adventure Company he has a thorough understanding of what will be expected of you during a season and can provide plenty of useful tips to manage your time effectively and maximise your ski season experience.
Course Outline
The aim of this four day course is to provide you with the skills required to cook in a ski chalet for the season. We will provide you with the information and practical knowledge to be able to produce six high quality evening meals as well as giving you the skills required to follow more complicated menu's and improvise with the dishes you have prepared using the cookery techniques learnt during your stay. The course is extremely intensive and completely 'hands on'. You will get the chance to try everything you have cooked as well as experience cooking for real guests and not just each other.
Day 1 (Sunday)
We will collect you from Montpellier or Carcasonne airport and bring you back to La Vieille Forge. In the evening an informal chat over dinner (cooked by us!) and the chance for you to find out more about the course and ask any questions.
If you are attending the course at Crail in Fife, we will collect you from St Andrews train station.
