Aimed at keen amateurs wanting to work a ski season, yet lacking the confidence to cook for larger numbers, this course provides the perfect opportunity to learn new skills, gain a more advanced range of cooking techniques and have a greater selection of menu's in your repertoire. The course is run by John, who has over 15 years experience in the catering industry, including 6 years spent working as a chef in Switzerland and 10 ski seasons catering in chalets. As a Director of The Winter Adventure Company he has a thorough understanding of what will be expected of you during a season and can provide plenty of useful tips to manage your time effectively and maximise your time on the slopes.
The aim of the course is to give you the confidence and skills to provide a well-presented breakfast, 6 x 3 course meals and home-baked cakes and biscuits to a very high standard, using proper, safe working techniques. Courses take place at La Vieille Forge guest house in Languedoc. La Vieille Forge provides a realistic working environment , giving you the chance to cook for larger numbers and real guests as you would in a chalet. All equipment and ingredients are provided and you will of course get the chance to sample the dishes you have prepared.
